Spiced Moroccan turkey stew

Moroccan spiced turkey

Ingredients:

0.5 kg turkey cut into pieces
1 large onion, diced
2 cloves garlic, minced
2 tbsp. olive oil
1 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. ground cumin
1/2 tsp. paprika
1/2 tsp. turmeric
1/4 tsp. cayenne pepper (optional)
1 tomato, diced
1 cup chicken broth
1/2 cup pitted green olives
2 tbsp. honey
2 tbsp. chopped fresh cilantro
Salt and black pepper, to taste
Instructions:

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened.

Add the turkey to the pot, and cook for 5-6 minutes until lightly browned on all sides.

Add the ginger, cinnamon, cumin, paprika, turmeric, and cayenne pepper (if using) to the pot. Stir to combine, and cook for 1-2 minutes until fragrant.

Add the diced tomatoes and chicken broth to the pot, and stir to combine. Bring the mixture to a simmer, and then reduce the heat to low. Cover the pot, and let the stew simmer for 20-25 minutes until the turkey is cooked through.

Stir in the green olives, honey, and chopped cilantro. Season with salt and black pepper to taste.

Serve the Moroccan turkey stew hot, garnished with additional cilantro if desired.

This recipe serves 4-6 people, and it can easily be doubled if you need to feed a larger crowd. You can also customize the spices and heat level to your liking – if you prefer a milder stew, omit the cayenne pepper and reduce the amount of black pepper. Similarly, if you like your food spicy, feel free to increase the amount of cayenne pepper or add some hot sauce to the stew.
